I was born and raised in NOTO peninsula Japan. Therefore, my life is closely related to fishery and agriculture, There are very few restaurants in my hometown because it’s countryside.
When I was a high school student, I visited an elegant restaurant for the first time. I was impressed by the dishes and the ambiance. I thought that the restaurant is amazing!!
And I'm interested in traditional cuisine and local delicacy in every country. Japanese cuisine may be simple, but each food has a very deep philosophy in it… Each season has a different cuisine to offer, because it depends on the supply of the ingredients. The preparation is complicated, but delicate.
